2017 Pre-Thanksgiving Post

It’s that time of the year again!! Turkey time!! It seems we have a new way of getting into these holiday seasons in recent years, at least my family.. We hedge on not even bothering, why … It’s just Mom, my brother and Kevin and I most of the year. Why go to all that trouble of the turkey, and all that work, and it’s so much trouble just for one meal… That is at least what my Mom thinks… She just doesn’t want to deal with it.. Personally, I love it… I would have Thanksgiving dinners once a month if they would let me!) Start the day with Pumpkin French Toast,

French toast casserole prepped the night before, and baked while the bird is getting into the hot seat…

and get the Turkey, gravy, potatoes, sweet potatoes, dressing, gravy, beans, cranberry sauce, gravy, Rhodes Rolls, gravy (wait, did I mention gravy?) Pumpkin pie, Pumpkin Cheesecake, Pumpkin Cobbler, jello and whipped cream all over everything… Right, already out of Eggnog… better get more… Hey, I love this stuff… besides, I won’t run out of food for weeks! Love those leftovers… I actually shop for the big meal with leftovers in mind. Extra stuffing ingredients so I can make more in a few days, extra cranberry sauce, and heavy whipping cream (no Cool Whip near my house normally..), and always extra butter…

Let the feast begin!!

I digress… So, a week before the grand day, we are in negotiations… Mom says ho hum, I’m too old… I don’t want to deal with it, and it’s so much work, and we hate to invade your home… and I say.. really, I don’t mind.. I would like to do this… I have bought all this stuff already… and she says I should bring something… I have some cranberry sauce… I say, Mom, I have this, and that, and Will has a turkey we need to cook, and there is canned stuff just for this occasion… and I still have the cream cheese in the freezer from my birthday cake I never made, lol.

You get the point. I try not to sound too excited. She might scare off and not come. Will I hope will bring KC, and at least James might show up. Becky has her family in Oklahoma, and she was here last year, so I think she might be at the helm of T-Day this year… I tried to show her how I make most things last year from scratch, so last year was kinda Thanksgiving The Hard Core version, lol. This year I might be more lenient and allow some easy stuff… (lol, fat chance!)

Just saying.. better add a bucket of sugar…

but canned cranberry sauce is definitely allowed. We made it from actual cranberries last year and it was AWFUL, oh lord it was bad tart…

really bad… But, I think most things were just fine.

We brined the Turk overnight, and used the electric roaster and the bird was fantastic I think. So much so, I think this year will be a repeat. I got a lot of broth from the bird, after cooking the carcass and all the bones overnight. We ate off that bird for days.

Well. In light of all this, I will have turkey, even if nobody else comes, lol. If you are still reading this drivel, and you need some guidance, reassurance, or if you have some food safety questions, I have added some links here as a possible help to folks new to this, or simply if you’re getting old and forgetful, (like me) or if you just want to see some new info (they DO change some of these recommendations sometimes after testing) SO, here I go with a little writing test. Let’s see if I can get all the links into a SHORT narrative. (By the way, a lot of my narrative is MY thoughts.. not necessarily those of the National Food Safety Police… lol

First, make sure if you want to give home made canned food as gifts, you have safe canned foods to give as gifts.. Safe canning procedures and tested recipes can be found at the NCHFP website for Canning here, or use the Ball Blue book.

Next, plan ahead.. pick the absolute biggest Turkey you can get into your cooking vessel, lol. Ok, go with me here… do you like homemade Pot Pies?, Hot Turkey sandwiches? Turkey Veg Soup? Turkey Spaghetti? Chef’s Salads? Oh yea. You are gonna need some leftovers… just saying… Ok, fine, there are ways to judge how big a turkey you need…

Next, be sure all the make ahead goodies are accounted for… and plan to make something for that big Holiday get together with your work, or social club. Keep these safety tips in mind, as well…

Brave soul, you are.. Stuffing or Dressing? Have you decided?

And, if in the midst of all the confusion, you have a question that you need answered, like, right now… you’re not alone. You might find the answer there…

Turkey induced slumber? Turkeynosis? Think that Turkey enzyme put you to sleep? lol, think again, it’s probably all the load of carbs you just ingested … Other myths are possibly answered here… So, go ahead, enjoy all that good food, but be ready to work that stuff off, you have only a month to get into shape for round 2…
